Potatoes are great for frying up if you use extra-virgin olive or extra-virgin coconut oil. These oils are the most natural and are good for your health.
The coconut oil can take high heat, maintain its stability, and be good for your health. The olive oil on the other hand needs to be used at a lower temperature, because if it smokes that's a bad sign that it has been damaged and will not be good for your health.
Potatoes are high in nutrition, having all the vitamins, minerals, protein, and wholesome carbs that you need for good health. They are so easy to fry up and taste so good.
If you have a grater, you can grate a raw potato and fry it in about a tablespoon of oil. While it is cooking on medium, the potato pieces stick together and you can turn it over like a pancake in about 5 minutes when it has browned.

You are always safe using the organic potatoes, although they will cost more. If you don't want to bake your potatoes, you can also bake them by cutting them how you like and then mixing them in a bowl with about one tablespoon of good oil like the kind mentioned above.
