Potatoes provide complete nutrition for growing and hungry children. In fact, there was an orphanage in Peru that was so lacking in financial means, that the only thing they could give the children was potatoes, water, and some supplemental oil.
These children grew normally and were in perfect health. Even the babies that were given potato milk did really well.
Potatoes actually have more protein than humans actually need. They are complete with all the vitamins and minerals, and wholesome starch for bodily energy.
And, they have a great taste that you will never get tired of. Don't throw the potato skins away, they are great sources of iodine for the thyroid. Eating a potato is like eating a giant supplement shaped like a pill.
There are so many ways to fix potatoes that you can have a wide variety and never get bored. The most common way would be a baked potato.
If you are trying to stay away from the pathogens found in butter, then just add some extra-virgin olive oil and salt. The combination of oil and salt is much like the taste of butter since the big secret to the buttery taste is the salt.
Mashed potatoes are another popular way to eat these nutritional powerhouses. Simply boil the cut up potatoes with the skin on. Then, when they are soft, you can mash the pieces with a fork.
There are some amazing vegan gravies that you can make if you have a blender and some raw cashews or sunflower seeds. Then, you just add certain herbs and spices after cooking to make it taste like chicken gravy.
You can also cut the potatoes up lengthwise in half and then lengthwise in half again for some fun potato wedges. Just sprinkle on some of your favorite seasoning and bake until they are chewy on the outside and soft on the inside.
These and french fries can easily be baked till done and dipped in some ketchup for a treat all kids love. You don't have to deep fry the potatoes if you put the fresh cut, french fry sticks with the skin and all in a bowl and mix them up with a tablespoon or two of oil before baking.
If you want to get fancy you can buy special cutters that will make the fries look like little round waffles or curly Q's. You can even fry them up in a pan with a little oil instead of baking.
Kids will love the shapes that you can do potatoes; squares, rectangles, letters, circles, and balls. There are a multitude of ways to sculpt them.
If you grate the potatoes and fry the bunch together in the shape of a pancake, you can turn it over when crispy and season it the way you like It will really stick together as it is cooking.
There are also hash browns, scalloped potatoes, potato milk, and potato cubes for a soup. The scalloped potatoes can be made vegan style with special ingredients that will give a very similar taste and look, helping you to avoid all of the cholesterol and cancer-causing animal proteins.
Have some fun with potatoes. Don't feel guilty because of all the anti-potato hype that is out there. The people who say potatoes are bad also say you should eat flesh everyday. You can't achieve your optimum health if you keep insisting on having to get your protein from the carcasses of dead animals. You body wasn't made for that even though it's a good survival food in times of starvation.
