Beta carotene often referred to as vitamin A or more commonly carrots, yams, pumpkins, cantaloupe or any vegetable or fruit that is orange is going to keep your eyes healthy and working properly. If you are impressed that the orange in fruits and vegetables signifies the amount of retinal or beta carotene then you will be surprised that most color signifies something significant about the foods you eat.
The only exception in orange produce would be with oranges, these actually do not contain an excessive amount of vitamin a, but that doesn't mean they aren't good for you. Oranges are universally known as the number one source for vitamin C, which is the number one most effective anti-oxidant when fighting free radicles.
Vitamin C is unique in the way that it can be water soluble and fat soluble, humans are actually the only species that can take vitamin C and convert it from the blood to the fat and vice versa. This means you can store your excess vitamin C in your fat and use it when you do not get enough from your diet.
All other mammals actually create vitamin C within their body, excluding bats, guinea pigs and several species of primates. It is considered to be a genetic mutation that humans have lived with because their foods are so high in the nutrient.
If there is a not enough vitamin C, about 60 mgs a day, in your diet scurvy will be contracted which will come with some severe symptoms. Scurvy was discovered by sailors who were living out at sea for long periods of time without out any citrusy produce, on account it would go bad on the long voyage out at sea.
Though, vitamin C deficiency isn't the only thing that will cause disease. All the vitamins play an essential role in health.
A very unpopular nutrient, vitamin K, found in leafy greens like spinach and broccoli, is essential for the anti-blood-clotting process. If you have a vitamin k deficiency you will be liable to bruising and slow healing and possible blood clots, which can be fatal.
Every vitamin is essential in some way or another, but this doesn't mean you have to memorize them all and constantly take a supplement every day. It is simple to get a healthy variety of different nutrients by simply eating an assortment of foods.
You need to eat your fruits and vegies, but it is important to try and get different types of fruits and vegetables in your diet.
