Almond milk is becoming a popular drink. It's tasty and very good for you. Many people have health challenges with regular dairy milk and are opting for non-dairy versions for milk.
It can be quite expensive to buy pre-made almond milk. And, it's not as nutritious as the kind that you can make at home.
There is actually quite an easy process to making your own almond milk. First, you will need about one cup of almonds, one blender, one quart of water, and a tray of ice cubes.
Put the almonds into the blender, then add only enough water to cover up the almonds. Oh, and by the way, make sure you only use raw almonds.
Turn on the blender and blend the almonds until it becomes a smooth pulp. Add some water into the blender and then pour it into a two quart pitcher.
The milk will be thicker and more flavorful if you add less water. But, by adding in some extra water, it will save you even more money.
You can also use less almonds if you soak them first. Then, they will double in size.
Then, add one tray of ice cubes to the mix and there you have a very simple almond milk for your cereal or just for drinking. There will be some tiny pulp pieces that will just float to the bottom of the pitcher.
Then, your milk will be very white, smooth, and nice. Some people like to use a cheesecloth to strain the almond milk, and that is your preference if you want to do it that way.
Some people don't like the outer skin of the almonds, because it is not white. If this is the case for you, you can blanch the almonds and then pop off the skins.
It's helpful if you soak the almonds first. There is a toxin in the almond skin that is released into the soaking water.
Drain off that water after soaking the almonds for 12 hours. Then, just blend them as normal.
If you want to make the milk taste even better, you can add some sweetener, spices or flavorings. But, generally, the milk should taste awesome like it is.
You can use this almond milk for any recipe that would have called for milk. But, it is best with cereal or for dunking an oreo cookie into.
This process will cost you a fraction of what it would have cost you to buy it at the store. A quart of almond milk can be about $4-7.
