The founder of the South Beach Diet is Dr. Arthur Agatston a cardiologist whose was trying to improve the cholesterol and insulin levels of his patients. The South Beach Diet involves a strong willpower and lots of self motivation. According to its founder it is scientifically based and rich in vegetables, fruits, whole grains, and lean protein.

The South Beach Diet Phases
Phase 1 - A two week period
In this first phase, you eat regular portions of lean meats, such as fowl, fish, and shellfish. Vegetables are also allowed in this phase, as are nuts, cheese (not all dairy), and eggs. The goal here is to eat three well balanced meals per day, and to eat enough so that you do not always suffer from hunger pangs.
First Phase diet Foods to include are: sirloin, skinless chicken or turkey breasts, all types of fish, boiled pork, turkey bacon, whole eggs, fatfree cheeses, peanuts and nuts, green vegetables, canola and olive oils.
Diet Foods to avoid during phase one include: steaks, unlean pork, breast of veal, all yoghurt and icecream, milk including whole, low-fat, soy and dairy, and full fat cheeses, carrots, corn, fruits and fruit juices, anyalcohol, all starchy foods such as breads and cereals, oatmeal, matzo, rice, pasta, pastries, baked goods such as pies .

Phase 2 - South Beach Diet (reaching your goal weight)
The second phase is similar to the first phase, but you are allowed some of the foods you were disallowed from phase one. You can now begin to start eating high in fibre carbs (wholegrain breads) which will help raise your insulin levels mildly.

Phase 3 - Weight Maintenance
This third south beach diet phase, which is an even more laid back version of the first phase diet plan, is to last the rest of your life span. This phase should now be used to maintain your healthy weight you achieved during phase two. Should your weight begin to climb again, you repeat the diet plan. Much of the initial weight-loss may be due to water loss caused by carbohydrate restriction. As with any diet program; all South Beach Diet plan participants should consult a doctor before starting. A balanced diet and exercise program combined with a healthy lifestyle is paramount to maintaining weight loss.
